Today’s recipe is chicken fried rice from our most favourite indo – Chinese cuisine.This recipe is easy to make & it’s also called one pot meal. Where we used to add all ingredients like rice, Veggies, eggs, meat or chicken & with some Chinese sauce & spices.
This version of chicken fried rice is easily found in the roadside hotels & small food truck of tamilnadu. Usually this fried rice looks like in bright red color, coz they use to add some of our local southern spices to the dish like red chilli powder, garam masala which also add more flavour & taste the rice.
Usually in fried rice, most of restaurant & roadside shops use to add ajinomoto to enhance the taste. But nowadays we know that anjinomoto (monosodium glutamate) is not good for our health and its gives more side effects. Am sure, it will taste good without adding anjinomoto. Instead of it we add a tsp of white vinegar to give sourness to the dish.

Road side Chicken fried rice /Street style chicken fried rice/chicken fried rice
Basmati rice (cooked) -approx 400gms
Fried chicken – 350gms
Ginger garlic paste -1 tsp
Carrot – 1/2 cup chopped
Cabbage – 1 cup chopped
Capsicum – 2 cups chopped
Soy sauce – 1 tbsp
Greenchillies sauce – 1 tbsp
Tomato ketchup – 1 tbsp
Spring onions – 1 cup chopped
Spring onions stalk – handful
Salt as required
Heat oil in the kadai on med high flame, add beaten eggs, pepper, salt & cook until scrambled.
Remove the scrambled eggs & keep aside.
Now add again tbsp of oil, add spring onions & saute for 1mins.
Add ginger garlic paste & cook until raw flavour goes off.
Add chopped carrots, Cabbage, salt & cook for 3mins or until half cooked.
Now add capsicum & saute for 2 mins.
Now soy sauce, green chilli sauce, tomato ketchup & mix it well.
Add red chilli powder, pepper pwd & mixed it.
Add fried chicken pieces & saute for 2 – 3 mins on med high flame.
Now add the cooked rice & mixed well.
Finally add scrambled eggs, spring onions stalk & cook for 3 mins on high flame.
Serve hot & enjoy.
How to cook rice?
Soak the rice for 30mins.
Boil water on the vessel, add half salt & tbsp of oil.
Once it starts to boil add th rice & mixed up with spatula.
Cook the rice until 80 – 90 percent done.
Now drained the water & cool down the rice.
How to make fried chicken?
In a bowl add cleaned & boneless chicken, add a tsp of coriander pwd, red chillie pwd,garam masala pwd, salt to taste, 1 tbsp of maida & corn flour, 1small egg & 1 tsp ginger garlic paste.
Mixed all the ingredients evenly on the chicken & marinate for at least 5 to 10 mins.
Heat oil in the kadai on med high flame, add marinated chicken & deep fry for 2mins on each side on med low flame.
Don’t over crowded.
Once fried, remove the excess oil by using paper towel.
