Eggless honey cake / iyengar bakery style eggless jam cake/easy bakery style eggless honey cake without oven.

Today’s recipe is every one’s favourite bakery style eggless honey cake /jam cake. Instead of eggs, we going to use thick curd /yogurt. This Recipe is simple to make in home without oven.

It is similar to basic sponge or vanilla cake. It is flavoured with honey sugar syrub and any fruit jam icing on top. Finally spread some dessicated coconut flakes on top of jam. This honey flavoured cake is hugely popular in south india and is generally served as a condiment slice in iyengar bakery’s.

Maida / plain flour – 2cups
Curd / yogurt – 3/4 cup 
Sugar – 1 cup
Oil – 3/4 cup
Vanilla extract – 1 tsp
Baking soda – 1 /4 tsp
Baking powder -1 tsp
Milk – 1/2 cup, if REQUIRED (2 to 3 tbsps)
Sugar – 2 to 4 tbsp
Water – 1/2 cup
Honey – 2 to 4 tbsps
Mixed fruit jam – 1/2 cup
Honey – 2tbsp
Method :
Eggless sponge cake;
First grease the pan with a tsp of butter, add a tbsp of flour, dust the extra flour & keep aside.
In a mixing bowl add Curd, sugar, oil, milk, vanilla essence & mix all wet ingredients by using hand whisk.
Keep siever on the bowl, add flour, baking powder, soda, salt & sieve all dry ingredients on the bowl.
Slowly mix the batter with whisk or spatula.
Add another 2 tbsp of milk (if required) & mix it to get cake consistency.
Add the batter to the greased cake pan & tap it to break the bubbles.
Keep wire rack inside the pressure cooker & heat it on med high flame for 10 mins.
Keep the cake pan on wire rack.
Cover it with the lid without gas cutter & whistle for 40 to 55 mins on low flame or insert tooth pick & comes out clean.
Honey syrup;
Add 3-4 tbsp sugar in 1/2 cup water.
Boil the sugar syrup for 2 minutes.
when the sugar syrup is warm, add 1/4 cup honey and mix well.
Pour the prepared honey syrup over the cake and allow to seep into the cake. keep aside.
Jam mixture ;
Add ½ cup mixed fruit jam and 1 tbsp honey in a pan.
Mix well.
Now spread a generous amount of jam mixture evenly over cake.
Sprinkle 2 tbsp of shredded almond flakes over cake.
Finally, cut the honey cake and serve.
